Horiatiki Greek Salad
This salad is unreal, so good I can NOT stop making it! Give it a try and let us know what you think! It's a healthy new year option!
1 cucumber cut chunky
2 tomatoes cut chunky
3/4 sliced green pepper
1/4 sliced red onion slivered
3/4 block feta cubes
2 tsp dried oregano
1 tbs plus 1 tsp red wine vinegar
1/4 cup olive oil
*pinch more oregano before serving
First, cut your tomato in the bowl where you will be adding the rest of the ingredients. This is a CRUCIAL step for this salad, its simple and you want the juice of the tomato as part of the dressing TRUST ME! Chop, sliver and cut rest of ingredients. Drizzle with olive oil and RWV add dried oregano. Toss together, let marinade in your fridge for 1 hour at least prior to serving. Sprinkle on a little more oregano right before serving. I add chopped grilled chicken and cheese bread you can add whatever protein/carb you would like!
