I mean, talk about waiting way to long to get on the no bake protein ball train! These things are beyond amazing and this is coming from someone who loves donuts, cake and all things sweet. I did some research on this trend and then put my own spin on them and this recipe is what I came up with! For some reason I can't stand the smell of protein powder, I don't know what it is about it, I just don't use it! I added my favorite seed blend and of course peanut butter and this blend itself is packed with protein, no need for the scoop of the "fake stuff". I think they are even better the next day after the flavors marry together. You can be creative and add your own spin but below is what I think seems to be perfected.
INGREDIENTS
- 2/3 cup honey peanut butter
- 1 cup rolled oats
- 1/3 cup honey
- 1/2 cup coconut flakes
- 1/2 cup dark chocolate chips
- 2 TBS hemp seed
- 2 TBS flax seed
- 2 TBS chia seed
- dash of organic vanilla extract (when I say dash I mean about 1/8 tsp )
DIRECTIONS
Add all ingredients to a bowl, mix up with a fork till everything is saturated. Roll into about 1 inch balls and display in a cute cake stand or cookie plate because everything tastes better when it's on display!
TIP
Right after mixing they seem sticky but after about 30 min of sitting they get a coating and the stickiness goes away, so I recommend waiting about 30 minutes before rolling them out.
