"Greek Salad" can be used very lightly in American cuisine and can be served various different ways. This is my spin on the non-traditional American adaptation which even further deviates from the original. I've added tarragon and coconut sugar in the dressing and kale in the body. So why call it a Greek Salad? It has the base of a traditional, but with a modern twist and extra added health benefits.
We make a lot of salads at my house all year long but they seem to change depending on the season. This Champagne Salad is one of my favorite late summer salads and is currently on repeat. I've included instructions on how to make from scratch or simply assembling everything prepped from the store. You can also make it vegetarian or vegan, my preference is vegetarian. First I want to highlight the health benefits of Cocoa Powder. I honestly didn't know that it was good for you, because I always associate it with chocolate in the sweet candy bar form. In a nut shell, it is very low in calories, has tons of fiber, gives you endorphins and lots of beneficial minerals.
I love this this Simple Salad. I make it at least once a week, sometimes a few times. It is so good as is, or I use it as a base and build to it for a fuller meal. I also top it on pasta, burgers, bread, sandwiches, wraps, etc.!
I love various dishes of pasta, especially with full fat sauces BUT since I try to stay as healthy as I can I like to try to recreate these types of sauces in a lighter (less calorie) way. If I can create a healthy version that still has a lot of flavor I try to mostly make that version whenever I crave a pasta dish.
