If you haven’t tried any of my recipes go to the store and buy everything on this list! When you read the ingredients and think yeah right doesn’t sound like a winner, you have to TRUST me on this. This is THE ONE to try! Why?! Because it’s delicious and if you didn’t know what was in it you would think it was a REAL CHOCOLATE TRUFFLE! Put someone to the test, then tell them what’s in it and how GOOD it is for you! They are loaded with protein, fiber, and nutrients your body needs like magnesium, zinc and iron but only 35 calories each!
First I want to highlight the health benefits of Cocoa Powder. I honestly didn't know that it was good for you, because I always associate it with chocolate in the sweet candy bar form. In a nut shell, it is very low in calories, has tons of fiber, gives you endorphins and lots of beneficial minerals. I did some research online and I am linking a good overview here.
Ingredients
- 1 cup canned Black Beans (rinsed)
- 1/2 cup Maple Syrup (the real stuff!)
- 2 TBS Ground Flax Seed
- 2 TBS Coconut Oil
- 1/3 Cup unsweetened Cocoa Powder
- 1 cup Raisins (unsweetened)
- Unsweetened Coconut Flakes (optional)
Directions
Toss all ingredients into a high power blender, I use the Vitamix and it’s amazing, blends everything in seconds! Blend until all mixed about 60 seconds. Pour/scrape into a bowl and chill in fridge for an hour.
Next, scoop about 25 drops on a lined cookie sheet. Pop back in the fridge to chill for another hour.
Now you are ready to roll into balls. With clean hands, roll into little balls in the palms of hands, you might have to wash hands and dry in between to prevent from getting sticky. Roll in unsweetened coconut flakes or leave as is. The kids prefer no coconut flakes and I like them both ways but the coconut flakes adds another dimension of goodness! Just pour about 1/4 cup or coconut flakes on a small plate and roll all sides in the flakes until it’s coated. Store chilled in fridge for 3-5 days.
If you have 20 minutes RUN to the store and make these! They are nutrient-dense and so so so good, if you don’t you will miss out!
